Indian Sea Rice Recipes
3 Indian Mere rice recipes to prepare at home:
Indian sea rice (Tibetan rice, water millet, rice mushrooms, Tibetan mushroom) is a blend of whole fermenting cultures used to make a sour and lightly carbonated beverage.

1. Classic Indian Sea Rice:
Ingredients:
- 3 litres of filtered water
- 1 cup (approx. 150g) of dried Indian sea rice grains
- ½ cup (approx. 100g) organic sugar (brown sugar or coconut sugar)
Instructions:
- Activation: rinse the Indian sea rice grains through a sieve and rinse thoroughly with cold water. Place the grains in a large glass or plastic container.
- Adding the sugar: add ½ cup of sugar to the container and pour 3 litres of filtered water over it. Stir until the sugar dissolves.
- Cover the container with gauze or a clean cloth, securing it with a rubber band.
- Fermentation: Place the container in a dark place at room temperature (18-25°C). Leave to ferment for 2-3 days.
- Readiness check: the drink should be slightly acidic and slightly aerated. The fermentation should be at room temperature and should be slightly acidic and slightly carbonated. To taste, you can continue fermentation for another 1-2 days if you prefer a more acidic drink.
- After a couple of hours of fermentation, check the fermentation for a taste: Strain the liquid through a plastic or glass sieve, separating the grains of Indian sea rice. The grains are reusable to make a new batch.
- Storage:Store the finished drink in the refrigerator in an airtight container for up to 2 weeks.
Tips:
- Indian sea rice grains are reusable up to 4-5 times. For best results, use fresh grains. 3 to 5 times.
- For different flavours, you can add fresh fruits or berries to the second fermentation.
- For different flavours, try adding different kinds of grains to the fermented grains to get different flavours.
2. Indian Sea Rice with Ginger and Lemon:
Ingredients:
- 2 litres of filtered water
- 1 cup (approx. 150g) of dried Indian sea rice grains
- ½ cup (about 100g) of organic sugar (brown sugar or coconut sugar)
- 1 small piece (about 3cm) of fresh ginger, sliced
- ½ lemon, sliced
Instructions:
- Follow steps 1 to 3 of recipe 1 "Classic Indian Sea Rice".
- Add the ginger and lemon.
- Continue fermentation: Follow the fermentation and straining instructions in Recipe 1 (Steps 4-7).
- Storage.
Tip: Ginger and lemon add a slightly spicy and citrusy flavour to the drink. 4. The ginger and lemon will add a hint of citrus and zestiness to the drink.
